Combine the mix in a bowl with half the milk and 2 of the eggs.
Beat until a smooth batter forms.
Add the other half of the milk and 2 eggs and stir until well combined.
Melt some butter or oil in a pan.
Pour a thin layer of batter in pan and allow to spread over bottom of pan.
Cook until both sides are golden brown.
TIPS:
You can keep the cooked pancakes warm between two plates that are on a simmering pan of water. You can also keep warm in a 125° oven, or warm in microwave.
For cheese or bacon pancakes, place the cheese and/or bacon in the pan first, then add the batter.
