Koopmans Lemon (Citroen) Cake Mix 400g

Mix for baking Dutch lemon cake.


  • 150g butter
  • 4 eggs
  • 50ml water


  • Preheat the oven to 320° F (160° C) and place rack in middle position.
  • Grease a 30cm spring form pan with butter and flour, or baking spray.
  • Beat the butter on low with an electric mixer.
  • Add the cake mix, 50ml water and the 4 eggs.
  • Mix on lowest speed for 1 minute, and then 2 minutes on high, until batter is light and fluffy.
  • Pour batter into prepared pan, and bake 55-60 minutes, until golden brown.
  • Remove from oven, wait 3-4 minutes before removing from pan.


  • To check if the cake is done, insert a prikker into the middle of the cake. If it comes out clean, the cake is done.
  • Top the cake with a glaze.
