Recipe for Dutch Meatball Soup

Dutch Meatball Soup
|Meatballs (See Recipe)|
|3||Carrots, peeled and sliced**|
|2 Stalks||Celery, sliced**|
|2||Onions, peeled and sliced**|
|1 Carton||Beef or Vegetable Broth|
|1 Package||Vegetable Soup Mix|
|2-3 Handfuls||Vermicelli Noodles|
This is the easy part. Put all the ingredients, except for the vermicelli, into a large pot. Bring to a boil, cover and simmer until the vegetables and meatballs are cooked through. Add the vermicelli during the last 5 minutes of cooking. Remember, vermicelli expands quite a bit, so a little goes a long way.
Serve hot with buns and butter!
